SALAD WITH ZUCCHINI PASTE (200 G), BAKED MACKEREL (100 G) AND WHOLE WHEAT BREAD (1 PC)

 100 g Zucchini
 ½ Cucumber
 ½ Sweet pepper
 ½ A tomato
 Greenerytaste
 1 tsp Olive oil
 130 g Mackerel fillet
 30 g Whole wheat bread
 ½ Wine vinegar
 Lemon juicetaste

Zucchini cut into thin strips and spread on a preheated pan without oil. The fire should be medium so that the zucchini quickly fried, and not stewed. Stir every 3 - 4 Minutes. Turn off the fire when the marrows are browned, but remain crunchy;

Cut cucumbers and peppers into thin strips;

Cut the tomatoes in half rings and mix with all the vegetables. We season the salad with oil, wine vinegar and finely chopped herbs. Salt and pepper to taste.

Pre-marinated mackerel fillets in lemon juice for 10 - 15 Minutes. Bake at 220 C for 20 Minutes, without covering anything, so that excess fat evaporates. Serve fillet with salad and a slice of bread.
