 1 Potato (medium size)
 30 g Goat cheese(or soy cheese)
 1 tsp Italian herbs
 1 tbsp Olive oil
 60 g Beetroot(boiled)
 60 g Carrots(boiled)
 50 g Pickle
 ¼ Onion
 20 g Peas(fresh or frozen)
 Salt taste
 Peppertaste

Potatoes are cut across so that it resembles an accordion, but not cutting 1cm from the bottom;

Mix the cheese with herbs with a fork and season the mixture of potato cuts with this mixture. Grease with olive oil on top and send to a preheated oven to 200C for 20 Minutes;

Boil beets and carrots until cooked (or in a double boiler) and cut into cubes when cooled. We also cut the cucumber and onion into cubes. We mix all the vegetables with peas and season it all with olive oil with salt and pepper.
