In a pre-heated pan, simmer finely chopped tomato and pepper. If the pan allows, do it without using oil. If not, you can pre-grease the pan with vegetable unrefined oil in a frying brush or a cotton pad.

In order for the vegetables to start up the juice faster under the lid, salt and pepper to taste;

In a bowl, beat the eggs until smooth and add to the vegetables. Or leave the tomato and pepper raw and wrap it later in the finished omelet;

Reduce the fire and without turning, prepare the omelet;

On two slices of bread, spread the omelet and finely chopped cheese.
