70 g Beans(White)
30 g Feta *
150 g A tomato
50 g Avocado
30 g Arugula
20 g Fresh herbs(dill, parsley, cilantro)
1 tbsp Olive oil
½ tsp French mustard
Sea salttaste

Soak beans in water overnight or for a couple of hours. Drain the water. Boil in clean salted water until tender (the longer they are soaked, the faster it will boil).

While the beans are boiled, cut the tomato and avocado into cubes.

Combine the vegetables with the finished beans, herbs and arugula. Season with oil, salt, pepper, mustard. Top with grated feta cheese.
* Feta can be frozen in the freezer. This will make it possible to preserve the cheese for longer, and besides, grated frozen feta gives an interesting taste to the dish and it will be needed less.
