In a large pan or pan with a thick bottom, fry the onion with thyme in hot oil. Lightly salt and pepper;

Add zucchini. Just a couple of minutes. Add the cubes of tomato. Then some hot water. Gently mixed. Bring to a boil over low heat and simmer, periodically turning over, about 10 Minutes. Salt, pepper to taste;
Cook or bake potatoes and add to vegetable stew.
