1 cup Diced red sweet pepper
1 cup Chopped green onion
½ Chopped cilantro
1 tbsp Olive oil
2 tbsp Finely chopped garlic
1 cup Frozen corn kernels
1 tsp Cayenne pepper

Bring water to a boil, and then pour in rice. When the water begins to boil again, reduce the heat and cover the pan with a lid.

Cook for 40 - 50 Minutes until the rice is soft. Stir once approximately in the middle of cooking.

While the rice is boiling, cook the vegetables. Heat oil in a skillet over low heat. Sauté the garlic for 4 Minutes.

Increase the heat to medium-high, add the remaining vegetables and corn and cook, stirring, for about 2 Minutes.
