Boil quinoa;

Boil green peas or steam, or immerse in boiling water for 5 Minutes, add to quinoa, mix, add herbs, spices to taste;

Heat the pan, add chopped eggplant, tomato, greens, simmer for
10 Minutes. Add chopped tofu, cook for another 5 Minutesunder the lid;

Serve with quinoa, sprinkled with olive oil.
