 80 g Lentils(green or red)
 100 g Cucumber
 100 g Chinese cabbage
 30 g Fresh herbs(dill, cilantro or parsley)
 20 g Arugula
 1 tbsp Olive oil
 1 tsp French mustard
 Sea saittaste
 Peppertaste

Soak lentils for several hours or overnight. Boil until cooked for 15 - 20 Minutes. Add sea salt and pepper to the finished lentils to taste;

Chop cabbage. Finely chop the cucumber, herbs and onions, mix with cabbage and arugula. Season with olive oil, lemon juice, mustard, salt, pepper.
